1. THAI PRAWNS

This dish is so easy to do and delicious, stir fry what ever vegetables you have. In this dish I used peppers, onions, broccoli and chillis.

When softened, remove from pan and fry prawns in garlic.

Add vegetables back to pan and a tin of coconut milk with red Thai paste.

Cook through until bubbling. Top with chilli and coriander.

Ingredients for 4

500 gm prawns

1 pepper

Broccoli spears

1 onion

1 red chilli

1 can coconut milk

2 teaspoon Thai red paste

2 cloves garlic

Salt for seasoning

2. MEATZZA

This is taken from a Nigella recipe, lean mince meat is used for the base of the meatzza.

500 gm Lean mince

3 tablespoons grated parmesan

2 eggs lightly beaten

3 tablespoons chopped fresh parsley

3 tablespoons porridge oats

1 ball Mozzarella

2 cloves garlic

1 tin drained chopped tomatoes

basil leaves to top

basil leaves

1 teaspoon dried oregano

seasoning to taste

Method

  • Preheat the oven to 220ºC/gas mark 7/425ºF.
  • In a large bowl, using your hands, combine the mince, Parmesan, breadcrumbs or oats, parsley and eggs. Grate in (or mince and add) the garlic and add some salt and pepper. Do not overwork it, just lightly mix together, or the meat wiill become compacted and dense.
  • Butter a shallow, round baking tin of about 28cm / 11 inches diameter and turn the meat into it, pressing the mixture lightly with your fingers to cover the bottom as if the seasoned minced meat were your pizza crust.

Make sure you’ve drained as much runny liquid as possible out of your can of chopped tomatoes, then mix the tomato with the garlic oil, oregano and some salt and pepper and spread, using a rubber spatula, lightly on top of the meat base. Arrange the mozzarella slices on top, and then put in the oven for

  • 20-25 minutes, by which time the meat should be cooked through and lightly set and the mozzarella melted.

Remove from the oven and let it sit for 5 minutes, then adorn with some basil leaves and bring it to the table before cutting into wedges, like a pizza.

3. CAULIFLOWER PIZZA

A surprisingly delicious pizza alternative with a cauliflower base.

Low in calories, but it’s also great for those of you who follow the Paleo or 5:2 diets, or anyone who avoids gluten. Made from grated cauliflower, egg and a little bit of low-fat cheese, this is utterly delectable and totally divine.

Ingredients:

1 tbsp coconut oil, meltedIMG_1629

1/2 large cauliflower, grated

1  egg, beaten

160g low-fat mozzarella, grated

2 tbsp low-fat cheddar, grated

1 tsp onion powder

5 tbsp tomato puree

4 tomatoes, chopped

2 cloves garlic, diced

1/2 tsp chilli flakes

Fresh basil leaves, shredded

Optional toppings (cooked chicken breast, prosciutto, spinach, cooked peppers, mushroom – you get the gist!)

Method:

1) Preheat the oven to 220C. Line a pizza tray with baking paper, then set aside. Take your grated cauliflower, place in a bowl and microwave until soft (it took about 7 minutes in my 850W). Remove and leave to cool.

 

4. THAI CHICKEN

As delicious as it is simple.

For 4

500 grams chicken

1 green pepper

1 onion

1 tin coconut milk

2 teaspoons green Thai paste

Fry onions and peppers, remove and fry chicken add vegetables back in. Stir in Thai green sauce and 1 tin of coconut milk and heat through. You can use any vegetables or protein for this dish.

Serve with brown rice or salad.

 

5. BAKED EGGS AND PEPPERS

This is an excellent quick supper. Just add a tin of chopped tomatoes, peppers and onions to a dish, and put in the oven until bubbling.

Drop in eggs to poach in the tomato mix and sprinkle with peppers.

Return to the oven until eggs are poached to your liking.

Sprinkle with basil and serve.
