Quinoa with Roast Vegetables

Quinoa is a delightful nutty tasting seed and can be used instead of cous cous. Add 1 1/2 cups of quinoa to 3 cups of water and cook on a low heat.

Add olive oil, chopped raw spring onions and parsley with finely chopped garlic.

For the roast vegetables pop sliced onions peppers and courgettes in to the oven at 180 degrees for 20 minutes stir in to the quinoa.
